Local Eats: San Antonio

Hi friends! This blog post is a little different than what I normally do, but a while back one of my friends told me that he would want to see some posts about local food spots that I recommend around San Antonio. Since my husband and I are always wanting to trying new places, I thought it was a really good idea. So, I’ll be writing more posts like this in the future as we try places we love! Here are a few spots that we highly recommend so far!

Fattboy burgers & dogs (website here)

This place is A-M-A-Z-I-N-G. There are two locations in San Antonio: one off of Vance Jackson (the original location), and the other is in Huebner Oaks. We got a little bit of everything….fried pickles (my favorite), burgers, chili cheese fries, and a hot dog. We went all out!! You can tell that everything is made fresh to order and nothing is frozen. Their fries are hand cut, which I love, and their burgers are nice and juicy. We went to the original location, which is much older and smaller, and is sort of a hole in the wall, but sometimes those are the best kinds of places, am I right? They also have shakes that looked awesome, but we couldn’t fit anything else in our bellies, so we’ll have to try those next time!

Home of the best chicken fried steak EVER and the 3 pound cinnamon roll! Do y’all see how big their chicken fried steak is?! They have different sizes, but of course my husband wanted to get the biggest one. The thing that makes their chicken fried steak stand out to me is that you can get queso on top of it instead of gravy. I have never seen that anywhere else. Now, I love me some white gravy on chicken fried steak, but I wanted to try something different….and I will tell you that I was NOT disappointed. It was the best chicken fried steak I’d ever had! For dessert we of course had to get the famous 3 pound cinnamon roll. You can’t go to Lulu’s without getting it! Sometimes we’ll go just for that and coffee. And they’re open 24 hours. You can’t beat it!

Located at The Pearl. Not only is the food great, but the atmosphere is so fun! I love the industrial look of it. Their menu is very different than any other restaurant you will go to – lots of their menu options change frequently, which is really cool because you won’t ever expect the same thing every time. Jacob had chicken and waffles and said it was some of the best fried chicken he’d ever had. I’m a pretty basic bitch and went with the fried chicken sandwich. Normally that would sound like a boring thing to order with all of the other options, but this wasn’t your basic chicken sandwich. The pickles on the sandwich are homemade and the sauce they put on it was unreal! Another thing I love is that they will serve you a cocktail to go!

This is definitely one of my favorite Mexican restaurants that we frequent. I am super picky about my cheese enchiladas and these are some of the best! It’s not a fancy place, but that’s what I love about it. It’s just a place you go when you want some really good Mexican food but don’t feel like going out to a fancy restaurant. I know there are many places like that in San Antonio, but this one is always a winner. We normally go for breakfast and get tacos, or we’ll go during lunch when I’m craving enchiladas (which is like every day….I’m drooling right now thinking about it). Jacob usually gets their fideo loco. He says it reminds him of his grandma’s fideo.

My husband took me to this place for the first time a couple of weeks ago and I loved it! I didn’t even know we had a place like this in San Antonio. It’s off of 281 and Bitters. They have any type of hot dog you can think of! I had a frito pie hot dog and OMG…..SO GOOD. We also had their fried pickles which were awesome, and their homemade chips. They also have burgers, which I’ll have to try the next time we go. But if you love hot dogs like we do, then this is your kind of place!

Chocolate Avocado Pudding

Cheers to another Friday! Today I made this awesome dairy-free pudding that I just had to share with you guys. I know it sounds questionable as a dessert, being that it has avocado in it, but I promise you it’s really good! And it’s super easy to make. Finding desserts that are dairy-free are very few and far between, so I’m happy that this one satisfies my sweet tooth and it’s still really healthy.

What you’ll need:

  • 3 large avocados (soft and ripe)
  • 7 tablespoons coconut milk
  • 2 teaspoons coconut oil
  • 1/4 cup cacao powder (you can add a little more if you want it to have more chocolate flavor)
  • 2 teaspoons vanilla extract
  • 2 tablespoons raw honey

Add all ingredients to a blender and blend on high until the mixture is smooth. Refrigerate for 30 minutes, and that’s it!!

Watermelon Margaritas

Guyyyyyys! I’ve been so excited to post this because this is the easiest and the BEST margarita to make at home. And it’s perfect for summer because it’s super refreshing. About a year ago, my girlfriends and I had a girls night and this was our drink of the night. I haven’t stopped making them since!

What you’ll need:

  • Watermelon Chunks (I buy these already cut up)
  • Simply Limeade (or any kind of Limeade, this one is just my favorite)
  • Lime
  • Tequila
  • Ice
  • Optional: Chili Lime Salt (like Tajin or Twang Beer Salt)

How to make it:

  • Optional:  Wet the rim of your glass with lime and sprinkle with chili lime salt. I prefer to do this because it gives the margarita a little bit of a spicy flavor. It’s so good!!
  • Put 2-3 watermelon chunks in a glass and muddle (or smash with a fork like I do) until the watermelon is liquidy
  • Add ice to glass (it’s important not to do this until after you’ve muddled the watermelon)
  • Squeeze in half of a lime
  • Add one shot of tequila (or more if you’re feeling dangerous)
  • Fill the glass with limeade and mix

And voila! It’s so easy and SO good! This is always my go-to drink when I want something easy and flavorful.

Easy Crock-Pot Dinner: 3-Ingredient Shredded Chicken

Hello, friends! A couple of nights ago, I made this super easy crock-pot dinner that quickly turned into shredded chicken tacos haha. It is the simplest recipe and it’s soo good. All you need is:

  • 3 boneless, skinless chicken breasts
  • 8oz of salsa
  • 1/2 packet of taco seasoning (or more if you want a little more flavor)

**If you’re making this for a get-together or small party, then I would double the recipe.

Throw all of the ingredients in the crock-pot and mix it up a bit so the flavors of the salsa and taco seasoning combine. Cook on high for 4 hours. After 4 hours, you should be able to shred the chicken easily with two forks. I usually let it cook a little bit longer (maybe 15 min or so) after I shred it all up.

Then serve! You can use this shredded chicken in tacos, on top of a salad, or in a lettuce wrap. We chose tacos, of course. We used the grain-free tortillas that I talked about in a previous post. I will link that here. Then we just added some shredded lettuce, tomato, cilantro, and guacamole. They were delicious!

Guilt-Free Coconut Cookies

Happy Monday! This weekend was a little rough for me and definitely tested my willpower. I went to my cousin’s graduation party on Saturday and then a baby shower on Sunday….there was cake EVERYWHERE. I have a major sweet tooth, so staying away from dairy and grains has been hard for me in that aspect. But I was super proud of myself and didn’t give in! So in today’s post, I wanted to share with y’all what I’ve been snacking on when I just NEED to have something sweet.

These cookies are SO good! They are the perfect amount of sweet and I love that they have little chocolate chips in them (fair-trade of course). And honestly, even though they are small, I am pretty satisfied after just one (although I could probably throw down the whole bag in one sitting). They are made from pure coconut and also have coconut oil in them, so if you don’t like coconut, then you won’t be a fan of these. But this brand has many other flavors that I’m sure are just as good. I got mine at Whole Foods, but I’ll link their website below in case y’all are interested. I also keep mine in the fridge because I like the coolness of them when they’re refrigerated.

Since it’s Monday, it’s time for me to go snuggle up in my bed and watch The Bachelorette. Maybe I’ll post something soon about who my favorites are so far! But first….dinner. I’m making some shredded chicken in the crock pot that is super easy. I’ll post the recipe of that at some point! I hope y’all have a great night.
